○ The Challenge of Creating the Most Popular Anpan
In response to the overwhelming popularity of anpan in user surveys, we finally took on the challenge of developing it. Making filled bread (anpan) is particularly difficult, but we aimed to create a product that surpasses the quality of typical anpan while still being a complete nutritional bread.
○ Developing a Completely New Dough from Scratch
When creating the dough for filled bread, we initially tried replacing the filling in the "BASE BREAD Curry" with red bean paste. However, the curry dough contained chia seeds and had a spicy flavor that didn’t complement the red bean paste, so we decided to develop the dough from scratch.
The process of filling the bread can damage the dough, making the development even more difficult. Throughout the stages of development, the dough would sometimes deteriorate or harden over time.
To create a delicious anpan that meets BASE BREAD's standards, we engaged in numerous discussions and trials with various people until we were satisfied with the results. It was extremely challenging to meet all the criteria: complete nutrition, delicious taste, long shelf life, and mass production capability.
The dough is characterized by a chewy texture that is quite different from previous BASE BREAD products. We also carefully selected whole wheat flour from several types to best enhance the flavor of the anpan. We hope you enjoy the contrast between the smooth koshian and the taste and texture of the dough.
○ Specially Selected Hokkaido Red Beans for an Elegant Sweetness
At the beginning of development, we considered whether to use koshian (smooth red bean paste) or tsubuan (chunky red bean paste). We ultimately chose koshian because it better matched our target customers' preferences and complemented the dough's texture.
The red bean paste was carefully selected from six different types. While extending the shelf life, many options lost flavor, and even when we found a delicious paste that matched the dough, it often lacked manufacturing suitability in factory tests. After many attempts, we finally adopted a red bean paste made from Hokkaido red beans, which features a gentle, elegant sweetness and is also suitable for production.
We believe this product allows you to fully enjoy the flavor of red beans and the sweetness of the red bean paste while keeping the sugar content as low as possible.
